Palo Alto, California. – PARC, a Xerox company, today announced the spin-off of EverCase, a new PARC-incubated start-up that aims to disrupt global cold supply chain and food storage technology markets extending the shelf life of meats, seafood and produce.
Freezing is an essential part of the cold supply chain, but it presents challenges. Food contains water, and when water freezes it expands, rupturing cells – an effect that significantly compromises food texture. Once a food is thawed, liquids leak out, reducing the overall quality of the food. Traditional refrigeration can preserve food quality, but at the expense of food shelf life, leading to significant wastage rates throughout the food distribution chain.
EverCase is a device that sits inside freezers and keeps food subzero without the formation of ice crystals, allowing food to retain its original quality and texture. EverCase works with freezing infrastructure, using pulsed electric and oscillating magnetic fields to keep food at a sub-freezing temperature without actually freezing the food. The technology is safe, chemical-free and inexpensive to manufacture.
“Freezing foods can extend their shelf life and reduce food waste, but once the ice crystals form, the texture and flavor of the food just isn’t the same,” says Chris Somogyi, Founder and CEO of EverCase. “EverCase’s technology can alleviate this problem, providing consumers with food that has the same texture, flavor and quality as the day it rolled off the farm or the ocean.”
PARC identified the technology behind EverCase in collaboration with its inventor, Dr. June SoojinTeacher, Department of Human Nutrition, Food and Animal Sciences, College of Tropical Agriculture and Human Resources to University of Hawaii‘I in Manoa. Dr Jun also works with the university Office of Innovation and Commercialization which signed a license agreement with Evercase in 2022. The technology is the subject of 13 publications and 9 years of research.
Chris Somogyi was part of the PARC team that incubated the technology in close collaboration with Dr Jun. “When I saw this technology and worked with the PARC team who incubated it, I realized how much of an impact it could have. We have a real opportunity with EverCase to improve food quality, reduce waste and generate new food experiences,” Somogyi said. “It’s time to disrupt and improve cold storage by stopping ice formation, in order to achieve better quality for consumers, improve income and, above all, to respect the efforts and resources that producers devote in the first place to growing food.”
